Product description
Nikolas De Queiroz Elias is an experimentally processed Brazilian coffee, using an induced fermentation to enhance complexity and sweetness in the cup. Roasted to a medium-dark level, the coffee develops a rich, full-bodied profile with notes of dark chocolate, ripe cherry, caramel and toasted hazelnut.
The fermentation adds depth and fruit character, while the roast brings out a rounded sweetness and smooth, lingering finish.
About this coffee
The Cerrado Mineiro Region is a world-renowned origin for the production of high-quality coffee – the first "Designation of Origin" in Brazil, located in the northwest of the state of Minas Gerais.
Having well-defined seasons – a hot, humid summer and a pleasantly dry winter – is a strong characteristic of the region. Coffee plantations are cultivated in areas with altitudes ranging between 800 and 1,300 meters, resulting in high-quality coffees with a unique identity.
The coffees have a "Guarantee of Origin and Quality" from the Cerrado Mineiro Region Regulatory Council.
About the Producer:
Fazenda São Bernardo Santa Marta , located in Patrocínio, Minas Gerais, has been recognized for its production of specialty coffees since 1985. Situated in the Cerrado Mineiro region, the farm holds a Protected Designation of Origin, guaranteeing the authenticity and quality of its beans.

The Champions Stage, held annually by Expocacer, celebrates the best coffees of the harvest in categories such as Induced Fermentation, Natural, and Pulped Natural. This coffee, a highlight of the November 2024 edition, reflects the care and excellence of its producers.
Furthermore, Expocacer promotes the "Essências by Expocacer" program, which supports small and medium-sized producers in their pursuit of sustainable, high-quality coffees, reaffirming its commitment to sustainability and excellence in coffee farming.
About the coffee:
This is a Topaz variety coffee grown at an average altitude of 920 meters on the São Bernardo Farm, in the municipality of Patrocínio in the Cerrado Mineiro region.

How to store coffee at home
To keep your coffee as fresh as possible, you need to protect your coffee from air, sunlight, heat, and moisture. These all will contribute to making it stale and lose flavour.
We suggest keeping your coffee in an airtight container, in a cool, dry cupboard. Our bags all have a de-gassing valve, to let out CO2 that the beans produce once roasted, it's not just there to sniff the coffee, and a reusable ziplock. So if you don't have a fancy coffee jar just push the air out the bag, zip the lock and give the bag another squeeze to get any remaining air out.
Do not store your coffee in the fridge. Roasted coffee absorbs moisture from the air (hygroscopic) and will also take up surrounding aromas. The aromas and moisture levels in the fridge will react with the coffee and delicate flavours will deteriorate.
