Another great coffee from Indochina.

I describe Dongka as an in-between coffee, in-between the fruity coffees and coffee coffees. This is a lovely biscuity fresh coffee great in every brew type, depending on your preference.

With flavours of citrus, caramel, raisin and black tea, this is a medium roasted coffee.

Green coffee cupping score of 85+

This is the forth year that I’ve been roasting Chinese specialty coffee at Bell’s Beans. Every one has had a great reception and there will be more to come through the year.

Description

Dongka is a family run farm and washing station with over 20 years experience in mostly commercial coffee production. It now produces some of the most consistent specialty-grade washed coffees in the Menglian region. In 2019, our origin partners, Yunnan Coffee Traders (YCT) helped to make modifications to the washing station with the aim of producing larger volumes of the higher-scoring coffees.

Indochina has worked in partnership with YCT since we first began importing coffees to the UK in 2016.
As a pioneer of the Chinese specialty coffee industry in Menglian County, Yunnan Province, YCT operates farming, mill, research, and training facilities. Its mission is three-fold:

How to store coffee at home
To keep your coffee as fresh as possible, you need to protect your coffee from air, sunlight, heat, and moisture. These all will contribute to making it stale and lose flavour.

We suggest keeping your coffee in an airtight container, in a cool, dry cupboard. Our bags all have a de-gassing valve, to let out CO2 that the beans produce once roasted, it’s not just there to sniff the coffee, and a reusable ziplock. So if you don’t have a fancy coffee jar just push the air out the bag, zip the lock and give the bag another squeeze to get any remaining air out.

Do not store your coffee in the fridge. Roasted coffee absorbs moisture from the air (hygroscopic) and will also take up surrounding aromas. The aromas and moisture levels in the fridge will react with the coffee and delicate flavours will deteriorate.
